Lemon – overnight oat mix with dates, nuts and seeds

Lemon was probably the trickiest flavour to get right. Too much and it nearly blew your head off like one of those ridiculously sour sweets. Too little and I was left wondering, "Did I even put any lemon in?"
After plenty of tweaking, it landed exactly where I wanted it. Real freeze-dried lemon powder brings a fresh citrus kick that cuts through the creamy oats, while the natural sweetness of the dates rounds everything off perfectly.
Add a generous spoonful of full-fat Greek yoghurt and it all comes together into a breakfast that's bright, refreshing and seriously good.

Why overnight oats?
Simple to prepare and ready whenever you are.
Made with oats, dates, nuts and seeds.
Simply add milk, leave overnight and enjoy.
Freeze-dried lemon powder blends through the oats overnight, producing a fresh lemon flavour.
How to prepare
Best enjoyed overnight
Add the oat mix to a bowl or jar.
Add the recommended amount of milk.
Stir thoroughly, cover and refrigerate overnight.
Stir again before eating. Add more milk if preferred.
Serving guide
Small bowl: 80g mix with 105–115ml milk.
Standard bowl: 100g mix with 130–140ml milk.
Tastes best with yoghurt
Stir in yoghurt before soaking for an extra-creamy bowl, or add it in the morning. Either way, stir thoroughly so it blends evenly through the oats.
For a particularly creamy Lemon bowl, try adding a generous spoonful of full-fat Greek yoghurt.
Adjust to taste
Add more milk or yoghurt after soaking if you prefer a softer consistency.
Storage
Store in a cool, dry place. Once opened, reseal and consume within four weeks.
